225g self-raising flour
1tsp mixed spice
85g granulated sugar + extra 1tbsp
110g sultanas or raisins or dried fruit - whatever you like
Spoon to mix with
Turn on the oven: 400 F / 200 C / Gas mark 6. Grease a baking sheet with some of the margarine.
Sift flour and spince into a mixing bowl. Rub in the margarine until mixture resemebles fine breadcrumbs. Stir in the sugar and the raisins.
Make a hollow in the centre of the mixture and add the egge and the milk. Mix to make a stiff dough.
Place the mixture in 12 heaps on the baking sheets. Bake in the centre of the preheated oven for 15 to 20 mins or until golden brown. Cool on a wire rack, or leave on the baking sheet.
Eat them all that day – they’re better fresh!
